Honey Citrus Chicken

Recipe Makes: 4 servings

Prep Time: 10 minutes

Cook Time: about 20 minutes

Total Time: about 30 minutes

INGREDIENTS:

1 orange; juiced

1 tbsp lemon juice

2 tbsp honey

2-3 garlic cloves; finely diced

½ tsp salt & pepper

1 tsp crushed chili peppers

3 tbsp soy sauce

½ cup water; hot

½ tbsp corn starch

2 tbsp distilled vinegar

1 tbsp olive oil

2 chicken breasts

OPTIONAL: vegetables to saute with the chicken (I used 1 large pepper & onion)

DIRECTIONS:

  1. MAKE THE SAUCE: In a small bowl combine the juice from an orange, lemon juice, honey, garlic, salt & pepper, crushed chili peppers, soy sauce, hot water, corn starch, and distilled vinegar. Mix everything until well combined and set aside for now.
  2. If adding vegetables to the chicken, chop them up now and set aside. Chop the chicken into bite sized pieces.
  3. Heat up olive oil in a deep skillet on medium heat. Once heated, add in chicken and saute until it starts to brown up, takes about 10 minutes. Then add in your vegetables and saute for another 5-7 minutes or until they soften up.
  4. Add in the sauce and saute for about another 5 minutes or until the sauce reaches your desired consistency. Take off heat and serve with rice. Enjoy!
