Broccoli Cheddar Soup

Recipe Makes: 6 servings

Prep Time: 10 minutes

Cook Time: 1 hr

Total Time: 1 hr 10 minutes

INGREDIENTS:

1 medium onion

3 garlic cloves; diced

5 tbsp of butter

1/3 cup flour

2 cups milk

3 large carrots

2 cups heavy cream

2 broccoli florets

10 oz cheddar cheese

salt and pepper to taste

paprika to taste

red chili pepper flakes to taste

2 chicken breasts

DIRECTIONS:

  1. Start off by placing the chicken breast into a pot filled with water. Let the water come to a boil and turn down to a low heat. Then scoop out the white foam. Let the chicken boil for another 20 minutes or so until it becomes soft enough to shred.
  2. While the chicken is cooking cut up the carrots, onion and broccoli. Melt the butter in a skillet and add in the onion and carrots. Sauté until golden brown and then add in the diced garlic. Sauté until fragrant, then add in the flour. Once the flour is stirred in, take off heat.
  3. Check back on the chicken and shred it. Place it back into the pot and add the sautéed vegetables back in. Then add in the broccoli. Let boil for a few minutes and then add in the milk and heavy cream.
  4. Once mixed in add in the cheddar cheese. Stir in the cheese until it is completely melted. Then add in the salt, pepper, paprika, and red chili pepper flakes so the soup is seasoned to your liking.
  5. Serve with some homemade bread and enjoy!

STEP BY STEP INSTRUCTIONS:
