Lemon Poppy Seed Muffins

Recipe Makes: 12 muffins

Prep Time: 15 min

Cook Time: 25-30 min

Total Time: 40-45 min

INGREDIENTS:

2 cups flour

2 eggs

1 cup granulated sugar

1 tsp vinegar

1 tsp baking soda

1 cup sour cream

¼ cup unsalted butter; melted

2 tbsp poppy seeds

zest from 2 lemons

2 tbsp lemon juice

1 tsp lemon extract

DIRECTIONS:

  1. Preheat the oven to 350F. In the bowl of a stand mixer combine the eggs and granulated sugar. Then add in flour and butter.
  2. In a small ramekin combine the sour cream, baking soda, and vinegar. Mix together and let sit.
  3. Add in the poppy seeds, lemon zest, lemon juice, and lemon extract into the stand mixer. Mix into the batter until well combined. Next, fold in the sour cream into the batter.
  4. Pour the batter into cupcake liners until they are ¾ of the way full. Bake at 350F for 25-30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean. Let cool and enjoy!
