Recipe Makes: 24 cookies

INGREDIENTS:
2 sticks unsalted butter; room temperature
½ cup granulated sugar
1 cup light brown sugar
2 large eggs; room temperature
2 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking powder
½ tsp salt
1 cup chocolate chips
1 cup mini marshmallows
1 ½ cup graham crackers or biscuits; broken into little pieces
DIRECTIONS:
- In the bowl of a stand mixer beat together the butter, granulated sugar, and light brown sugar. Beat until light and fluffy, beat in eggs and vanilla until well combined.
- Add in baking powder and salt, mix them in until well combined. Slowly add in 1 cup of flour to the dough, and let fully incorporate before adding in another cup.
- Once the dough is mixed, fold in the chocolate chips, marshmallows, and graham cracker pieces.
- Place the dough into the fridge and let chill for 1 hr. while the dough is chilling preheat the oven to 350 F and line a baking sheet with parchment paper.
- Scoop a heaping tbsp of dough out and roll it into a ball. Place the dough 1” apart from each other so they won’t melt into each other.
- Bake the cookies at 350F for 10-15 minutes or until a toothpick inserted into the center comes out clean. Let them cool for 5-10 minutes and enjoy!
