Recipe Makes: 24 cookies

Prep Time: 1 hr 20 minutes

Cook Time: 15 minutes

Total Time: 1 hr 35 minutes

INGREDIENTS:

2 sticks unsalted butter; room temperature

½ cup granulated sugar

1 cup light brown sugar

2 large eggs; room temperature

2 tsp vanilla extract

3 cups all-purpose flour

1 tsp baking powder

½ tsp salt

1 cup chocolate chips

1 cup mini marshmallows

1 ½ cup graham crackers or biscuits; broken into little pieces

DIRECTIONS:

  1. In the bowl of a stand mixer beat together the butter, granulated sugar, and light brown sugar. Beat until light and fluffy, beat in eggs and vanilla until well combined.
  2. Add in baking powder and salt, mix them in until well combined. Slowly add in 1 cup of flour to the dough, and let fully incorporate before adding in another cup.
  3. Once the dough is mixed, fold in the chocolate chips, marshmallows, and graham cracker pieces.
  4. Place the dough into the fridge and let chill for 1 hr. while the dough is chilling preheat the oven to 350 F and line a baking sheet with parchment paper.
  5. Scoop a heaping tbsp of dough out and roll it into a ball. Place the dough 1” apart from each other so they won’t melt into each other.
  6. Bake the cookies at 350F for 10-15 minutes or until a toothpick inserted into the center comes out clean. Let them cool for 5-10 minutes and enjoy!
