Recipe Makes: 12 muffins

INGREDIENTS FOR MUFFINS:
6 tbsp butter; melted
1/2 cup light brown sugar
2 tsp vanilla extract
2 eggs
1 1/3 cup pumpkin puree
1/4 cup milk
2 1/2 cup all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp pumpkin spice
1 tsp salt
INGREDIENTS FOR CRUMB TOPPING:
1 cup all-purpose flour
1/2 cup light brown sugar
1/4 tsp cinnamon
6 tbsp cold butter; cubed
DIRECTIONS:
- Preheat oven to 350F and line a muffin tin with liners.
- In a large bowl beat together butter and brown sugar. Then add in the eggs and vanilla extract.
- Once combined stir in the pumpkin puree and milk.
- Then add in the baking soda, baking powder, pumpkin spice and salt. Mix well. And finally mix in the flour. Set aside for now.
- Make the crumb coat by combing the flour, sugar, cinnamon, and cold butter.
- Pour the batter into the muffin tin about 3/4 of the way full. And sprinkle on the crumb coat.
- Bake at 350F for 20-25 minutes or until a toothpick inserted into the center comes out clean and the tops become golden brown. Enjoy!
STEP BY STEP INSTRUCTIONS:
