Mini Oreo Cheesecake

Recipe Makes: around 12 cheesecakes

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

INGREDIENTS FOR CRUST:

12 Oreos

INGREDIENTS FOR FILLING:

16 oz cream cheese; softened (2 packs)

1/4 cup white sugar

2 eggs

2 tsp vanilla extract

12 Oreos; crushed (makes around 1 cup)

INGREDIENTS FOR TOPPING:

2 cups heavy whipping cream

1/2 cup granulated sugar

6 Oreos; cut in half

DIRECTIONS:

  1. Line a muffins tin with liners and preheat oven to 350F. Place the Oreos at the bottom of each liner.
  2. In a large bowl beat together the cream cheese and sugar. Once well combined add in the eggs and vanilla extract. Once the batter is mixed well, add in the crushed Oreos and fold those in.
  3. Scoop around 1/4 cup of the batter into each cup. Bake at 350F for around 15 minutes, be sure not to over cook the cheesecake. Take then out and let them cool.
  4. In a food processor, add in the heavy whipping cream and granulated sugar. Mix until a thick cream of made. Transfer to a piping bag and pipe some on top, decorate with a Oreo on top. Let cool in the fridge before serving. Enjoy!

STEP BY STEP INSTRUCTIONS:
