Recipe Makes: 6-8 servings

Prep Time: 15 minutes

Cook Time: around 50 minutes

Total Time: around 65 minutes

INGREDIENTS FOR DOUGH:

½ stick unsalted butter (4 tbsp) soft

½ cup granulated sugar

2 eggs

zest of 2 lemons

2 tbsp lemon juice

2 cups flour, extra for shaping the dough

1 tsp lemon extract

1 tsp baking powder

INGREDIENTS FOR GLAZE:

1 cup powdered sugar

3 tbsp lemon juice

DIRECTIONS:

  1. Preheat the oven to 350F. In a medium bowl beat together butter and sugar. Add in lemon zest, lemon juice, and lemon extract. Beat it all until it is incorporated, it might separate a little but that fine.
  2. Then add in 1 egg at a time, and mix well. Stir in the flour and baking powder until it all comes together.
  3. Sprinkle flour on to a baking sheet and dump out the dough, you should add enough flour so the dough doesn’t stick to you. Shape the dough into a ½ inch thick log, should be long.
  4. Bake at 350 F for 20-30 minutes or until the top becomes a light golden brown. Take it out of the oven and let it cool , so it’s cook enough to touch/slice.
  5. Slice the loaf into 1 inch thick pieces and lay the cookies back on to the baking sheet and bake each side for 10-15 minutes and flip. Take them out of the oven and let rest.
  6. While the cookies are cooling, make the glaze by mixing together the powdered sugar and lemon juice.
  7. Drizzle on the cookies and let dry. Enjoy!
