Blueberry Scones

Recipe Makes: 8 or 16 scones

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

INGREDIENTS FOR SCONES:

2 ¾ cup all-purpose flour

¾ tsp salt

1 tsp baking powder

1/3 cup granulated sugar

1 tsp vanilla extract

1 stick unsalted butter; frozen

1 large egg

½ cup milk

1 cup blueberries

coarse sugar; optional to sprinkle on top

INGREDIENTS FOR GLAZE:

2 tbsp lemon juice

¾ cup powdered sugar (confectioners’ sugar)

DIRECTIONS:

  1. Preheat oven to 400 F and line baking sheet with parchment paper.
  2. In the bowl of a stand mixer, mix together flour, salt, baking powder, and granulated sugar.
  3. In a small ramekin mix together the milk, vanilla extract, and egg. Whisk together until well combined. Mix into the flour until everything is wet.
  4. Grate the frozen butter and add it to the dough. Mix until well incorporated and then add in the blueberries.
  5. Roll the dough into a circle and cut it into 8 even wedge slices. Or split the dough into 2 even pieces and then roll them both into circles and cut 8 wedges from each to make smaller scones.
  6. OPTIONAL: Rather than making a glaze, you can brush the scones with an egg wash and sprinkle on coarse sugar on top.
  7. Carefully transfer the scones on to your baking sheet and bake at 400 F for about 15 minutes or until golden brown. While the scones are cooling, make the glaze by combining lemon juice and powdered sugar. Once the scones have cooled, drizzle the glaze onto them. Enjoy!
