Corn Muffins

Recipe Makes: 18 muffins

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

INGREDIENTS:

1 cup milk

4 eggs

¾ cup butter; melted

1 cup corn meal

2 cups flour

1 cup granulated sugar

2 tbsp baking powder

2 tsp salt

DIRECTIONS:

  1. Preheat the oven to 350 F.
  2. In a large bowl combine the milk, eggs, and melted butter. Mix together until combined.
  3. Then mix in the corn meal, flour, granulated sugar, baking powder, and salt. Mix until a thick batter is formed and there are no clumps.
  4. Then line a cupcake tin with liners and fill until ¾ of the way full.
  5. Bake the muffins at 350 F for 25 minutes until golden brown. Let cool and enjoy!
