Honey Roasted Acorn Squash

Recipe Makes: 1 squash

Prep Time: 10 minutes

Cook Time: 1 hr

Total Time: 1 hr 10

INGREDIENTS:

1 acorn squash

1 tbsp unsalted butter; divided

1 tbsp honey; divided

DIRECTIONS:

  1. Preheat the oven to 400F.
  2. Wash and dry the squash. Slice it in half, it helps to microwave it for a minute. Scoop out the seeds.
  3. Score the inside of the squash by making 1 inch cubes.
  4. Bush each squash half with ½ tbsp butter and then ½ tbsp honey.
  5. Pour ¼ cup water into a baking dish and place the squashes on the dish. Bake at 400 F for around 1 hr or until the squash can be easily pierced with a fork. Let cool and enjoy!
