Smashed Baby Potatoes

Recipe Makes: 4 servings

Prep Time: 10 minutes

Cook Time: 35-45 minutes

Total Time: 45-55 minutes

INGREDIENTS:

15 baby potatoes

3 tbsp unsalted butter; melted

4 garlic cloves; diced

¼ cup Parmesan cheese

salt & pepper to taste

paprika to taste

other favorite spices

DIRECTIONS:

  1. Preheat the oven to 400F. Boil the baby potatoes until they are semi cooked, should take around 15 minutes. You should be able to poke a fork though.
  2. Take the potatoes out and place them on a baking sheet. Then take a cup and smash them.
  3. Brush on the melted butter and sprinkle on the garlic and Parmesan cheese. Then add on the spices.
  4. Bake the potatoes at 400F for 20-30 minutes or until they start to brown up on the edges and they get crispy. Enjoy!
