Lemon Buttercream

Recipe Makes: 4 cups buttercream

Prep Time: 15 minutes

Cook Time: 5 minutes

Total Time: 20 minutes

INGREDIENTS:

4 sticks of butter; room temperature

2 tsp lemon extract

3 tbsp lemon zest

4 tbsp lemon juice

¾ cup evaporated milk

1 cup granulated sugar

DIRECTIONS:

  1. Start off by pouring the evaporated milk into a pan. Let it warm up on low heat and then add in the granulated sugar. Stir the mixture constantly so it doesn’t burn. Keep mixing and cooking until all of the sugar is dissolved and the milk starts to thicken up. Once it’s done cooking let it cool completely before using, or it might melt the butter.
  2. Beat the butter until it is light and fluffy and doubled in size. Once the butter is beat add in the lemon extract, lemon zest, and lemon juice. Mix it all in.
  3. Once mixed in add in the milk mixture 2-3 tbsp at a time and mix it in. Keep going until you reach your desired sweetness for the buttercream.
  4. Pipe and use as needed, if it starts to become too soft let cool in the fridge. Enjoy!
