Recipe Makes: 4 servings

INGREDIENTS:
4 large potatoes
¼ cup of oil (I used corn oil)
salt & pepper to taste
dill
DIRECTIONS:
- Start off by peeling the potatoes. Then slice them into small but even slices (so they could all cook evenly).
- Next add the corn oil to a large cast iron skillet and heat on medium fire. Once the oil is hot, add in the potatoes.
- Stir them around a little and place a lid onto the skillet. Let cook for a few minutes and then stir the potatoes around. Stir them carefully so they don’t break. Check on the potatoes often to make sure that they are not burning.
- Repeat step 3 until the potatoes are fully cooked. Now it’s time to salt & pepper the potatoes to taste. Take them off heat and garnish with chopped up dill. Enjoy!
