Pan Seared Potatoes

Recipe Makes: 4 servings

Prep Time: 10 minutes

Cook Time: around 20 minutes

Total Time: 30 minutes

INGREDIENTS:

4 large potatoes

¼ cup of oil (I used corn oil)

salt & pepper to taste

dill

DIRECTIONS:

  1. Start off by peeling the potatoes. Then slice them into small but even slices (so they could all cook evenly).
  2. Next add the corn oil to a large cast iron skillet and heat on medium fire. Once the oil is hot, add in the potatoes.
  3. Stir them around a little and place a lid onto the skillet. Let cook for a few minutes and then stir the potatoes around. Stir them carefully so they don’t break. Check on the potatoes often to make sure that they are not burning.
  4. Repeat step 3 until the potatoes are fully cooked. Now it’s time to salt & pepper the potatoes to taste. Take them off heat and garnish with chopped up dill. Enjoy!
