Recipe Makes: around 40 cookies

Prep Time: 45 minutes

Cook Time: 8-10 minutes

Total Time: around 55 minutes

INGREDIENTS:

4 eggs; room temperature

1 cup of granulated sugar

1 tbsp vanilla extract

2 cups flour

1 ¼ cups butter (2 ½ sticks); melted

½ tsp baking powder

1/8 tsp baking soda

DIRECTIONS:

  1. In a large bowl, whisk together the eggs and granulated sugar. Whisk for a few minutes or until the mixture becomes light in color and fluffy.
  2. Then add in the vanilla extract and melted butter. Mix to combine.
  3. Finally sift together the flour, baking powder, and baking soda and carefully fold it into the batter.
  4. Place the batter into the fridge for 30 minutes to cool. Before you take the batter out preheat the oven to 375 F.
  5. Brush oil on to a Madeleine pan. Scoop out the batter and fill the pan (I used 1 tbsp for each cookie). No need to spread out the batter, as cooking it will fill in the pan.
  6. Bake the Madeleine at 375 F for 8-10 minutes or until the edges are golden brown and the “bellies” have risen. Let cool for a few minutes in the pan and then transfer to a cooling rack. Dip in chocolate or dust with powdered sugar. Enjoy!
