Recipe Makes: around 40 cookies
Prep Time: 45 minutes
Cook Time: 8-10 minutes
Total Time: around 55 minutes
INGREDIENTS:
4 eggs; room temperature
1 cup of granulated sugar
1 tbsp vanilla extract
2 cups flour
1 ¼ cups butter (2 ½ sticks); melted
½ tsp baking powder
1/8 tsp baking soda
DIRECTIONS:
- In a large bowl, whisk together the eggs and granulated sugar. Whisk for a few minutes or until the mixture becomes light in color and fluffy.
- Then add in the vanilla extract and melted butter. Mix to combine.
- Finally sift together the flour, baking powder, and baking soda and carefully fold it into the batter.
- Place the batter into the fridge for 30 minutes to cool. Before you take the batter out preheat the oven to 375 F.
- Brush oil on to a Madeleine pan. Scoop out the batter and fill the pan (I used 1 tbsp for each cookie). No need to spread out the batter, as cooking it will fill in the pan.
- Bake the Madeleine at 375 F for 8-10 minutes or until the edges are golden brown and the “bellies” have risen. Let cool for a few minutes in the pan and then transfer to a cooling rack. Dip in chocolate or dust with powdered sugar. Enjoy!
