Pineapple Chicken

Recipe Makes: 4 servings

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

INGREDIENTS:

8 chicken thighs

6 tbsp soy sauce

½ cup pineapple juice

3 tbsp brown sugar

2 tsp corn starch

2 garlic cloves; crushed

1 tbsp olive oil

salt & pepper to taste

1 cup of pineapple

2 tbsp sesame seeds

white rice for serving

DIRECTIONS:

  1. Chop up the chicken into small chunks and set aside. Then chop up the pineapple into little pieces and set aside.
  2. Heat up the olive oil in a large skillet on medium heat. Add in the chicken and sauté until golden brown, then take out of the pan and set aside.
  3. Combine soy sauce and pineapple juice in the pan on low heat, once it comes to a slight boil add in the brown sugar, corn starch, crushed garlic cloves, and salt and pepper. Whisk together until the sauce starts to thicken up.
  4. Then add in the pineapple chunks and cook for a few more minutes until they start to soften up and then add in the chicken. Mix until everything is fully coated.
  5. Take off heat and sprinkle on the sesame seeds and serve with white rice. Enjoy!

STEP BY STEP INSTRUCTIONS:

Gather all ingredients.
