Ham Pinwheels (Roll Ups)

Recipe Makes: 10 servings

Prep Time: 15 minutes

Total Time: 15 minutes

INGREDIENTS:

¼ cup mayonnaise; divided

2 eggs; hard boiled & chopped into small pieces

½ cup shredded cheese

1 cup ham, chopped into small pieces

½ cup of parsley; chopped

1 cup of Russian carrot salad

2 long lavash breads (flat bread)

DIRECTIONS:

  1. Lay out 1 of the flat breads, and spread 2 tbsp of mayonnaise on it evenly. For the first layer, spread the ham, shredded cheese, and hard boiled egg evenly.
  2. Then place the other flat bread on top and spread the remaining mayonnaise onto it. Then evenly spread the Russian carrot salad and the parsley.
  3. And finally tightly roll up the rolls, but be careful so the bread doesn’t start to rip. The way you roll up the pinwheels is up to you. I like to roll them up so they make a long roll.
  4. Let cool in the fridge before serving and slice them up. If the rolls start to unroll, stick a toothpick into the center to keep them from unrolling. Enjoy!
