Recipe Makes: 4 servings

INGREDIENTS:
1 lb chicken thighs
¼ cup olive oil; extra for cooking
salt & pepper to taste
1 lime
¼ tsp cumin
1 tsp chili powder
1 ½ tsp tajin classico lime seasoning
10-15 mini peppers
1 medium onion
DIRECTIONS:
- In a large bowl combine the chicken thighs, olive oil, salt and pepper, juice from the lime, cumin, chili powder, and tajin classico lime seasoning. Cover the mixture with clear wrap and let sit, overnight is best.
- After the chicken has had time to marinade, heat up a cast iron skillet and add in olive oil. Place the chicken down and let it cook. Cook each side until it is golden brown.
- While the chicken is cooking, chop up the mini peppers and onion. After the chicken is golden brown on both sides, place it on a cutting board and let it cool for 10 minutes. Then chop up the chicken into strips.
- Add more olive oil into the skillet and toss in the chopped up vegetables. Sauté the vegetables until they start to brown up. Then add the chicken back in a cook for another few minutes.
- Serve the lime chicken hot. Enjoy!
