Recipe Makes: 6 servings

INGREDIENTS:
1 lb beef chunks
1 medium onion
4-5 potatoes
3 large carrots
3 cloves garlic
salt and pepper to taste
3 bay leaves
1 tsp parsley
1 tsp thyme
1 tbsp olive oil
2 tbsp flour
2 heaping tbsp tomato paste
DIRECTIONS:
- Peel and roughly chop the onion and carrots. And dice the garlic. Dice the potatoes into large cubes, I cut the potatoes in 4-6 pieces. Set aside for now.
- In a large dutch oven heat up the olive oil on medium heat. Once the oil is heated add in the beef chunks. Sauté the beef until all slides are browned. Take the beef out of the pot once it has browned.
- Leave the heat on the pot and add in the onion and carrots. Sauté until they become golden and add in the garlic. Cook the garlic until fragrant. Add in tomato paste and flour. Mix until everything is well combined. Add the beef back in and then pour in enough water to cover the beef and vegetables, I used around 1 L.
- Add in bay leaves, parsley, thyme, salt and pepper. Place the lid on the pot and turn the heat down to low. Let simmer for 1 hr or until the meat softens.
- Then add in potatoes and cook on medium heat for 20-30 minutes. Or until the potatoes are fully cooked though. Take off heat and enjoy!
STEP BY STEP INSTRUCTIONS:
