Recipe Makes: around 24 cookies
Prep Time: 15 minutes
Cook Time: 10-15 minutes
Total Time: 25-30 minutes
INGREDIENTS:
1 1/3 cups flour
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup (1 stick) butter
1 cup honey (or ½ cup brown & ½ cup white sugar)
1 ¼ cups raisins or chocolate chips
2 ½ cups oatmeal (I used rolled oats)
1 tsp vanilla extract
DIRECTIONS:
- Preheat the oven to 355 F. In a bowl combine flour, baking powder, baking soda, and salt. Mix until combined.
- Then in a large bowl mix together butter, vanilla extract, and honey until incorporated. Then slowly add in the flour mixture.
- Once all of the flour is combined fold in the raisins and oatmeal. Keep mixing until the mixture comes together into a big ball.
- Then line a sheet pan with parchment paper. Grab an ice cream scoop and scoop out the cookie dough. Roll the dough in your hands, until a nice shaped ball forms.
- Bake the cookies at 355 F for 10-15 minutes or until they become golden brown. Let cool and enjoy!
