Oatmeal Raisin Cookies

Recipe Makes: around 24 cookies

Prep Time: 15 minutes

Cook Time: 10-15 minutes

Total Time: 25-30 minutes

INGREDIENTS:

1 1/3 cups flour

1 tsp baking powder

¼ tsp baking soda

¼ tsp salt

½ cup (1 stick) butter

1 cup honey (or ½ cup brown & ½ cup white sugar)

1 ¼ cups raisins or chocolate chips

2 ½ cups oatmeal (I used rolled oats)

1 tsp vanilla extract

DIRECTIONS:

  1. Preheat the oven to 355 F. In a bowl combine flour, baking powder, baking soda, and salt. Mix until combined.
  2. Then in a large bowl mix together butter, vanilla extract, and honey until incorporated. Then slowly add in the flour mixture.
  3. Once all of the flour is combined fold in the raisins and oatmeal. Keep mixing until the mixture comes together into a big ball.
  4. Then line a sheet pan with parchment paper. Grab an ice cream scoop and scoop out the cookie dough. Roll the dough in your hands, until a nice shaped ball forms.
  5. Bake the cookies at 355 F for 10-15 minutes or until they become golden brown. Let cool and enjoy!
