One-Pot Chicken Vegetable Pasta

Recipe Makes: 4-6 servings

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

INGREDIENTS:

1 lb chicken breast

1 large pepper

1 cup carrots

1 medium onion

8 oz mushrooms

12 oz thin egg noodles

2 tbsp corn oil; divided

salt & pepper to taste

DIRECTIONS:

  1. PREP: Cook the egg noodles according to package. Dice up the chicken breast, pepper, carrots, onion, and mushroom into small cubes.
  2. In a deep pot (I used my dutch oven pot) add in 1 tbsp corn oil and let it heat up on medium heat. Once heated add in the diced chicken breast. Cook until chicken breast is fully cooked through and golden, should take around 10 minutes. Add in salt and pepper to taste.
  3. Take the chicken breast out and set aside for now. Add in the other 1 tbsp of corn oil and let heat up on medium heat.
  4. Add in mushrooms and cook until they released their liquids and the liquid evaporated. Then add in the diced carrot and onions. Cook until everything becomes nice and soft. Add salt and pepper to taste.
  5. Add the cooked chicken breast back in and mix everything until well combined. Lastly add in the cook egg noodle and mix so everything is incorporated well. Take off heat and serve. Enjoy!
