INGREDIENTS:
2 cups chocolate chips
1 cup pomegranate seeds; room temperature
1 tbsp coconut oil
6 tbsp coconut shavings
DIRECTIONS:
- Combine chocolate chips and coconut oil in a microwave safe bowl. Microwave for around 1 minute or so, but stop every 20 seconds to mix the chocolate and to make sure it is not burning.
- Add in the room temperature pomegranate seeds to the chocolate and mix until evenly coated.
- Spread the chocolate on a baking sheet lined with parchment paper. Sprinkle on the coconut shavings and let cool in the fridge for 30 minutes. Take out and break into chunks. Enjoy!
