Recipe Makes: 2 large dough balls
Prep Time: 20 minutes
Rise Time: 2 hrs 30 minutes
Total Time: 2 hrs 50 minutes
INGREDIENTS:
2 cups water; warm (100-115 F)
1 tsp sugar
1 ½ tbsp active dry yeast
2 tbsp olive oil; extra for oiling up bowl
5 ¼ cup flour; extra for dusting
2 tsp salt
DIRECTIONS:
- Combine warm water, sugar, and active dry yeast in a measuring cup. Let sit for 5-7 minutes or until mixture starts to get foamy.
- In the bowl of a stand mixer combine flour and salt. Mix until incorporated, then pour in the water mixture and drizzle olive oil. Knead dough until comes together and knead for 5 more minutes.
- Oil up a large bowl and place the dough in to rise. Cover and let rise for 2 hours and until doubled in size.
- Once doubled, dump the dough on a well floured surface and knead the dough again and let rise in the bowl for another 30 minutes. Once dough is done rising it is ready to use.

STORAGE:
FRIDGE: You can store the dough in the fridge for up to 48 hours. After the final rise you will want to put the dough in a well oiled bowl and cover with clear wrap and place in the back of the fridge.
FREEZER: To freeze the dough you will want to do the final kneading and then flatten it our to a disk shape. Place the disk on a lightly oiled baking sheet and let freeze. Once frozen wrap the dough in clear wrap and place into a freezer bag. Keep it in the back of the fridge and use within 4 weeks. To defrost you will want take the dough out of the freezer and keep in the fridge overnight. Then take the dough out 30 min before you will be making the pizza. Let them rise and use.
