One-Pan Garlic Chicken & Potato Bake

Recipe Makes: 4-6 servings

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hr

INGREDIENTS:

8 chicken thighs

1 lb potatoes

1 medium onion

3 tbsp olive oil

5 garlic cloves; diced

1 tsp sage & thyme

1 tsp salt & pepper

DIRECTIONS:

  1. Preheat the oven to 380 F. But if you are using a glass baking dish then place the dish inside (I place it in after I have everything ready to cook) and then start to preheat the oven and add in an extra 10 minutes or so to the baking time. If you place a glass baking dish into a hot oven there is a chance the dish may shatter.
  2. First you will want to wash the potatoes (and peel if desired). Cut the potatoes into 1” cubes and roughly chop up the onion. Place them into a baking dish.
  3. Combine chicken thighs, olive oil, garlic cloves, sage, thyme, salt & pepper in a small bowl. Mix until chicken thighs are evenly coated.
  4. Then place the chicken thighs on top of the potatoes and cover with foil. Pour the extra olive oil left in the bowl on top of chicken and potatoes.
  5. Bake at 380 F for 40 minutes covered. And then 10 minutes uncovered. Make sure the potatoes are fully cooked through. If not add in another 10 minutes until they are. Enjoy!
