Recipe Makes: 12 muffins

INGREDIENTS FOR MUFFINS:
1 ¼ cup flour
1 tsp baking powder
1 tsp salt
¼ cup granulated sugar
¼ cup brown sugar
1 ½ cup cranberries
1 tsp orange zest
1 large egg
½ cup milk
4 tbsp (¼ cup) butter; melted
3 tbsp orange juice
INGREDIENTS FOR TOPPING:
½ cup granulated sugar
¼ cup flour
4 tbsp cold butter; cut into pea size
1 tbsp orange juice
DIRECTIONS:
- Preheat the oven to 375 F and line a muffin tin with liners.
- FOR MUFFINS: In the bowl of a stand mixer combine flour, baking powder, salt, and both sugars. Whisk until combined.
- Then add in cranberries and orange zest. Toss around in the flour mixture until evenly coated.
- In a small bowl whisk together milk, egg, and butter. Once combined add it to the dry mixture and mix until well incorporated.
- Scoop and pour the batter in the the muffin tin until is it 2/3 full.
- FOR TOPPING: Combine all ingredients in a small bowl and mix until incorporated together.
- Sprinkle about 1-2 tbsp on top of each muffin.
- Bake at 375 F for 20 minutes or until you poke a tooth pick into the center and it comes out clean. Let cool. Enjoy!
