INGREDIENTS:
2 cups cornmeal
4 cups water
sour cream; optional topping
melted butter; optional topping
eggs; optional topping
bacon/sausage; optional topping
feta cheese; optional topping
DIRECTIONS:
- In a large pot, add in water and turn on to high heat. Once the water starts to boil, add in the cornmeal and turn to low heat.
- Stir the cornmeal constantly with a silicone whisk so no clumps form. The corn meal will begin to boil up. Let it continue to boil until it starts to thicken up. The whole process should take about 8 minutes to cook.
- Once cornmeal is cooked, let it sit in the pot for a few minutes and then dump it out on to a cutting board. It will be stiff enough to hold its shape.
- Serve with sour cream, melted butter, bacon/sausage, feta cheese, and even eggs for breakfast. The possibilities are endless! Enjoy!
