Recipe Makes: 1 full rack
Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 1 hr 15 minutes
INGREDIENTS:
1 rib rack
1 ¼ cup water
½ cup BBQ sauce; divided
2 tbsp brown sugar
1 tbsp paprika
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp chili powder
1 tsp salt and pepper
DIRECTIONS:
- In a small ramekin combine brown sugar, paprika, onion powder, garlic powder, chili powder, salt and pepper. Mix until combined and set aside.
- Grab the ribs and pat them dry. Then flip them over and take off the white membrane (easier to remove it with a white paper towel). Then rub on the dry rub for both sides. Then take ¼ cup of the BBQ sauce and rub it on both sides with a brush.
- Open the instant pot and place the trivet in. Pour in the water and coil the ribs around the side. Close the instant pot and pressure cook on high for 35 minutes and then do a natural release for 15 minutes. (The instant pot takes about 10 minutes to warm up.)
- After the ribs are done cooking, carefully take them out (since they are very hot) with kitchen tongs. And place the ribs on to a baking dish and rub on the rest of the BBQ sauce. Broil for a few minutes (I broiled for 5).
- Then carefully slice and serve hot with mashed potatoes or sweet potato fries. Enjoy!
