Pumpkin Puree

Recipe Makes: around 5 cups (depends on the pumpkin size)

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

INGREDIENTS:

1 pumpkin around 13″

DIRECTIONS:

  1. Preheat the oven to 400 F and grab a baking sheet. No need to line it with parchment paper since the pumpkin juices can be easily washed off.
  2. Wash the pumpkin and place it on to a cutting board. Cut off the top stem and cut the pumpkin in half. Scoop out the inside and toss it out (or you can make oven roasted pumpkin seeds).
  3. Place the pumpkin halves face down on the baking sheet and bake at 400 F for 40 minutes or until knife goes into the pumpkin easily.
  4. Let the pumpkin cool to room temperature. Once cooled you can either scoop out the inside or peal the skin off of it.
  5. Place the pumpkin into a food processor with the knife blade. And pulse until the pumpkin is smooth. Enjoy!
