Recipe Makes: around 5 cups (depends on the pumpkin size)
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
INGREDIENTS:
1 pumpkin around 13″
DIRECTIONS:
- Preheat the oven to 400 F and grab a baking sheet. No need to line it with parchment paper since the pumpkin juices can be easily washed off.
- Wash the pumpkin and place it on to a cutting board. Cut off the top stem and cut the pumpkin in half. Scoop out the inside and toss it out (or you can make oven roasted pumpkin seeds).
- Place the pumpkin halves face down on the baking sheet and bake at 400 F for 40 minutes or until knife goes into the pumpkin easily.
- Let the pumpkin cool to room temperature. Once cooled you can either scoop out the inside or peal the skin off of it.
- Place the pumpkin into a food processor with the knife blade. And pulse until the pumpkin is smooth. Enjoy!
