Pumpkin Placinta

Recipe Makes: 6 servings

Prep Time: 15 minutes

Cook Time: 40-50 minutes

Total Time: 55-65 minutes

INGREDIENTS:

3 cups shredded pumpkin; uncooked

1 lb fillo dough

3 tbsp granulated sugar

¼ cup corn oil

1 egg

½ cup sour cream

DIRECTIONS:

  1. PREP: Grab a baking dish and brush it with corn oil. Preheat the oven to 350 F. But if using a glass baking dish, do not preheat. Place the dish the with placinta into the oven and then turn it on. Placing glass into a preheated oven can cause it to shatter.
  2. If using a fresh pumpkin, shred it in a food processor on the medium grate.
  3. Start off by taking your fillo dough out of the packaging and laying it down flat. Grab 1 layer and lightly dab it with corn oil. I recommend dabbing with a silicone brush instead of brushing since brushing could rip the dough. (Cover the dough you are not using with a towel since it dries out very quickly)
  4. Repeat step 2 until you have a total of 4 layers. Stack the layers on top of each other. Grab another dough sheet and place in top of the oiled up dough. Then sprinkle on 1 cup of pumpkin and 1 tbsp of granulated sugar.
  5. Tightly roll the dough up and place it into the oiled up baking dish. Repeat for the rest of the dough sheets.
  6. Brush the remaining oil on to the rolls in the dish.
  7. Mix sour cream and egg in a small bowl. Pour the mixture over the rolls in the baking dish.
  8. Bake at 350 F for 40-50 minutes or until the top is golden brown. Let cool before slicing. Enjoy!
