Recipe Makes: 6 servings

INGREDIENTS:
3 cups shredded pumpkin; uncooked
1 lb filo dough
3 tbsp granulated sugar
¼ cup corn oil
1 egg
½ cup sour cream
DIRECTIONS:
- PREP: Grab a baking dish and brush it with corn oil. Preheat the oven to 350 F.
- If using a fresh pumpkin, shred it in a food processor on the medium grate.
- Start off by taking your fillo dough out of the packaging and laying it down flat. Grab 1 layer and lightly dab it with corn oil. I recommend dabbing with a silicone brush instead of a regular brushing since brushing could rip the dough. (Cover the dough you are not using with a towel since it dries out very quickly)
- Repeat step 2 until you have a total of 4 layers. Stack the layers on top of each other. Grab another dough sheet and place in top of the oiled up dough. Then sprinkle on 1 cup of pumpkin and 1 tbsp of granulated sugar.
- Tightly roll the dough up and place it into the oiled up baking dish. Repeat for the rest of the dough sheets.
- Brush the remaining oil on to the rolls in the dish.
- Mix sour cream and egg in a small bowl. Pour the mixture over the rolls in the baking dish.
- Bake at 350 F for 40-50 minutes or until the top is golden brown. Let cool before slicing. Enjoy!
STEP BY STEP INSTRUCTIONS:
