Pumpkin Muffins with Cream Cheese Swirl

Recipe Makes: 18 muffins

Prep Time: 10 minutes

Cook Time: 20-25 minutes

Total Time: 30-35 minutes

INGREDIENTS FOR MUFFINS:

1 ¾ cup flour

1 tsp baking powder

½ tsp salt

2 cup pumpkin puree

1 cup granulated sugar

½ cup brown sugar; packed

2 eggs

½ cup vegetable oil

2 tsp vanilla extract

INGREDIENTS FOR SWIRL:

8 oz cream cheese (1 package); room temperature

2 tbsp granulated sugar

1 egg yolk

2 tsp vanilla extract

DIRECTIONS:

  1. Preheat oven to 375 F.
  2. FOR MUFFIN: In the bowl of a stand mixer combine, pumpkin puree and both sugars. Mix until everything is combined and then add in eggs, vanilla extract and vegetable oil.
  3. Once combined add in salt and baking powder. Slowly add in the flour. Mix well in between incorporation so clumps don’t form.
  4. FOR SWIRL: In a small bowl mix together cream cheese, granulated sugar, the egg yolk, and vanilla extract. Mix until well combined.
  5. Line a cupcake tin with wrappers. Pour ¼ cup of the muffin batter into each tin, then add in ½ tbsp cream cheese mix to it and swirl with a toothpick.
  6. Bake at 375 F for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let cool and enjoy!
