Recipe Makes: 18 muffins

INGREDIENTS FOR MUFFINS:
1 ¾ cup flour
1 tsp baking powder
½ tsp salt
2 cup pumpkin puree
1 cup granulated sugar
½ cup brown sugar; packed
2 eggs
½ cup vegetable oil
2 tsp vanilla extract
INGREDIENTS FOR SWIRL:
8 oz cream cheese (1 package); room temperature
2 tbsp granulated sugar
1 egg yolk
2 tsp vanilla extract
DIRECTIONS:
- Preheat oven to 375 F.
- FOR MUFFIN: In the bowl of a stand mixer combine, pumpkin puree and both sugars. Mix until everything is combined and then add in eggs, vanilla extract and vegetable oil.
- Once combined add in salt and baking powder. Slowly add in the flour. Mix well in between incorporation so clumps don’t form.
- FOR SWIRL: In a small bowl mix together cream cheese, granulated sugar, the egg yolk, and vanilla extract. Mix until well combined.
- Line a cupcake tin with wrappers. Pour ¼ cup of the muffin batter into each tin, then add in ½ tbsp cream cheese mix to it and swirl with a toothpick.
- Bake at 375 F for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let cool and enjoy!
