Apple Stuffed Crepes

Recipe Makes: about 30 crepes

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

INGREDIENTS FOR CREPES:

1 cup water

2 cups milk

8 eggs

8 tbsp oil (I used corn oil)

2 cups flour

4 tbsp sugar

2 tsp vanilla extract

INGREDIENTS FOR FILLING:

3 medium apples

1 tbsp sugar

¼ cup butter

DIRECTIONS:

  1. FOR CREPES: Combine water, milk, eggs, oil, flour, sugar, and vanilla extract in a blender. Blend everything until well combined.
  2. Heat up a 10” pan on medium heat. Add a drop of oil and use a basting brush to brush the oil around and fully cover the pan.
  3. Once pan is heated add ¼ of a cup of the crepe batter. Swirl skillet until batter is fully coated on the pan. Once it starts to brown up on the edges, carefully use a butter knife to scrape the crepe. Using your hands, carefully grab the crepe and flip it. Once the other side is golden brown remove it from the skillet.
  4. FOR FILLING: Wash, core and slice the apples. Then shred them in a food processor on the medium grater.
  5. In a deep skillet, melt butter and add in the apples and sugar. Sauté them for about 5 minutes. Or until the apples have released the juices and are soft. Set aside.
  6. FOR ASSEMBLY: Lay out a crepe and scoop 2 tbsp of the apple filling. Shape the filling into a line and then take the crepe and fold it in half. Tuck one half of the crepe of it goes under the apples, and tightly roll the crepes.
  7. Before serving, place the crepes into a large baking dish and bake at 350 F for a few minutes. Serve warm. Enjoy!
