Scalloped Sweet Potatoes

Recipe Makes: 4-6 servings

Prep Time: 15 minutes

Cook Time: 50-60 minutes

Total Time: 1 hr 5-15 minutes

INGREDIENTS:

3-4 large sweet potatoes

½ tsp salt & pepper

½ tsp Italian seasoning

¼ cup butter (½ stick); cubed

2-3 garlic cloves; crushed

½ cup sharp cheddar

DIRECTIONS:

  1. Start out by washing and peeling the sweet potatoes. Then carefully slice the potatoes thinly with a knife or mandolin.
  2. Grab a baking dish (I used this pie dish), and place the scalloped sweet potatoes starting from the edges. Since my dish was a circle, the sweet potatoes went around in a circle starting from the outside to the inside. If you have a square or rectangle, just place them in normally from one side to the other.
  3. After the sweet potatoes are placed, sprinkle on the salt, pepper, and Italian seasoning. Then toss the garlic and butter on top in even increments.
  4. Then sprinkle on the cheese on evenly and cover with foil. *Place the dishware into the oven and bake at 400 F for 40 minutes covered and 10-20 uncovered or until cheese is melted and starts to brown up on top.

*I recommend placing the baking dish in the oven before preheating, because if you put the dish into the oven while its hot it might explode. It’s not recommended to place glass dishes into the oven because a drastic temperature can cause them to break.
