Cheese Chebureki

Recipe Makes: about 15 servings

Prep Time: 30minutes

Cook Time: 20 minutes

Total Time: 50 minutes

INGREDIENTS FOR THE DOUGH:

2 ½ cup flour

1/3 cup olive oil; and extra for frying

¾ cup water; hot

pinch of salt

INGREDIENTS FOR THE FILLING:

feta cheese; crumbled

DIRECTIONS:

  1. In the bowl of a stand mixer, beat together flour, olive oil, water, and salt. Mix until everything is well combined. Then cover with a kitchen towel and let it rest for 20 minutes.
  2. Split the dough into 4 even pieces (cover the pieces when not in use). Roll the dough out on a well floured surface until its about ¼ inch thick. Use a plate or bowl as a template, and cut out the circles.
  3. Drop about 2 heaping tbsp of the crumbled feta cheese (or how ever much you want). Close the chebureki and pinch them with a fork or your fingers.
  4. Heat up oil in a deep pan on medium/low heat. Once hot, place in the chebureki and fry each side until golden brown.
  5. And place on a paper towel to soak up the extra oil. Serve hot. Enjoy!
