Recipe Makes: 2-4 servings
Prep Time: 15 minutes
Freeze Time: 6 hrs-overnight
Total Time: at least 6 hrs 15minutes
INGREDIENTS:
2 cups heavy whipping cream; chilled
1½ tsp vanilla extract
1 can dulce de leche
DIRECTIONS:
- In a small bowl, combine 3 tbsp heavy cream with the can of dulce de leche. Mix until well combined and set aside.
- In the bowl of a stand mixer, combine the remaining heavy cream and vanilla extract. Whip on high for about 5-6 minutes. Or until still peaks form. The peaks need to be stiff enough so that they won’t fall over when you lift the whisk from the bowl.
- Then gently fold in ¾ of the dulce de leche mix you made earlier. Do it carefully so the cream won’t deflate too much. Save the ¼ of the dulce de leche mix for a decorative swirl on top.
- Once the cream is combined and ready, pour ½ of it into a dish. Then take the dulce de leche mix and dump half of it in there and swirl it around with a knife or toothpick. And repeat for the top layer.
- Place the ice cream into a freezer for at least 6 hrs-overnight. Enjoy!
