Farmer Cheese Pancakes (Sirniki)

Recipe Makes: 20-25 pancakes

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

INGREDIENTS:

2 ½ cups farmers cheese

3 eggs

3 tbsp granulated sugar

½ tsp salt

1 tsp vanilla extract

¾ cups flour; extra for dredging

corn oil for frying

DIRECTIONS:

  1. In the bowl of a food processor, combine farmer cheese, eggs, sugar, salt, and vanilla extract. Pulse until everything is well combined. Add in flour and mix.
  2. Put the extra flour for dredging in a dish. Using a tablespoon, scoop the sirniki into the flour mixture. I like to roll the sirniki around and then pat it down to flatten it out.
  3. Heat up the corn oil in a deep pan on medium heat. Once hot, add in the sirniki and fry until golden brown and the flip and fry the other side.
  4. Once done frying I like to place them onto a paper towel to soak up the extra oil. Enjoy!

STEP BY STEP INSTRUCTIONS:

Gather all ingredients.
