Apple Cake (Sharlotka) (VIDEO)

Recipe Makes: 1 cake

Prep Time: 20 minutes

Cook Time: 50-55 minutes

Total Time: about 1 hr 10-15 minutes

INGREDIENTS:

6 eggs; room temperature

1 cup granulated sugar

1 ½ cup flour

1 tsp baking powder

1 tsp vanilla extract

3-4 apple; granny smith recommended

DIRECTIONS:

  1. Preheat oven to 350 F. In the bowl of a stand mixer, whisk eggs for 1 minute on high. Slowly start to add in the sugar, while still mixing. Once the sugar is added in, whisk the mixture on high for 8-9 minutes. Or until pale in color and fluffy.
  2. Once the eggs are pale, add in vanilla extract and gently fold it in. Mix flour and baking powder in a separate dish. Set aside for now.
  3. Fold the flour mixture into the eggs. But do it slowly and carefully so you don’t deflate the eggs.
  4. Wash, peel, and core the apples. Slice them into small pieces. I like to cut the apples for the top a little bigger so I could make a design.
  5. Then fold in the apples that you have cut for the cake, and pour into a greased 10” springform pan. Use the apple that were saved for the top to decorate how ever you would like.
  6. Bake at 350 F for 50-55 minutes or until the top is golden brown and toothpick comes out clean (stick a toothpick into the center and it comes out clean). Enjoy!
