Recipe Makes: 1 cake

INGREDIENTS:
6 eggs; room temperature
1 cup granulated sugar
1 ½ cup flour
1 tsp baking powder
1 tsp vanilla extract
3-4 apple; granny smith recommended
DIRECTIONS:
- Preheat oven to 350 F. In the bowl of a stand mixer, whisk eggs for 1 minute on high. Slowly start to add in the sugar, while still mixing. Once the sugar is added in, whisk the mixture on high for 8-9 minutes. Or until pale in color and fluffy.
- Once the eggs are pale, add in vanilla extract and gently fold it in. Mix flour and baking powder in a separate dish. Set aside for now.
- Fold the flour mixture into the eggs. But do it slowly and carefully so you don’t deflate the eggs.
- Wash, peel, and core the apples. Slice them into small pieces. I like to cut the apples for the top a little bigger so I could make a design.
- Then fold in the apples that you have cut for the cake, and pour into a greased 10” springform pan. Use the apple that were saved for the top to decorate how ever you would like.
- Bake at 350 F for 50-55 minutes or until the top is golden brown and toothpick comes out clean (stick a toothpick into the center and it comes out clean). Enjoy!
