
Recipe Makes: 8 chicken thighs
Prep Time: 10 minutes
Marinate Time: 2 hours- overnight
Cook Time: 1 hour
Total Time: about 3 hours 10 minutes-next day
INGREDIENTS:
2 cups pineapple juice
½ cup mayo
1 ½ tbsp Chicken Montreal Seasoning
8 chicken tights with skin
1 medium onion
DIRECTIONS:
- In a bowl, combine pineapple juice, mayo, and Chicken Montreal Seasoning. Mix until well combined, and roughly chop onion into thick circles.
- Add chicken and onion into a large mixing bowl. Then pour the marinade over them and mix until everything is well combined, and chicken is completely covered.
- Let sit overnight for best results, but after 2 hours it should be good too. Grab a large baking dish and place chicken into it. But place the onions from the marinade in between the chicken and the skin.
- If using a glass baking dish, DO NOT preheat since there is a chance the dish can explode if placed into a preheated oven.
- Bake at 350 F for 40 minutes and then turn up the heat to 400 F and bake for 20 more minutes or until golden brown. Enjoy!
