Cook Time: 15 minutes

Total Time: 30 minutes

INGREDIENTS FOR SCONES:

2 ¾ cup flour

¾ tsp salt

1 tsp baking powder

1/3 cup granulated sugar

1 tsp lemon zest

1 stick unsalted butter; frozen

1 large egg

½ cup milk

1 cup blackberries

1 tbsp lemon juice

INGREDIENTS FOR GLAZE:

2 tbsp lemon juice

¾ cup powdered sugar (confectioners’ sugar)

DIRECTIONS:

  1. Preheat oven to 400 F and line baking sheet with parchment paper.
  2. In the bowl of a stand mixer, mix together flour, salt, baking powder, granulated sugar, & lemon zest.
  3. In a small ramekin, combine milk and egg.  Whisk together until well combined.  Stir into the flour until everything is wet.
  4. Grate your frozen butter, and add it to the dough.  Mix until well incorporated and then add in your blackberries and lemon juice.  Mix until combined.
  5. Roll the dough into a circle and cut it into 8 even wedge slices.  Or split the dough into 2 even pieces and then roll them both into circles and cut 8 wedges from each to make smaller scones.
  6. Carefully transfer the scones on to your baking sheet and bake at 400 F for about 15 minutes or until golden brown.  While the scones are cooling, make the glaze by combining lemon juice and powdered sugar.  Once the scones have cooled, drizzle the glaze onto them.  Enjoy!
