Zucchini Spread

Recipe Makes: 4-5 servings

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

INGREDIENTS:

3 medium zucchini

1 medium onion

1 large bell pepper

2 cups baby carrots or 2 medium carrots

1 tsp salt

½ tsp pepper

1 tbsp tomato paste

2 garlic cloves

2 tbsp olive oil

herbs to taste; optional

DIRECTIONS:

  1. In a food processor shred the zucchini, onion, bell pepper, and carrots using the medium size holes. 
  2. Heat olive oil in a large deep pan on medium heat.  Add the vegetables once the oil is warmed up.  Cook for about 20 minutes or until the vegetables start to become soft.  Dice the garlic and add it in, cook until it becomes fragrant.
  3. Add in salt, pepper, and tomato paste.  Mix/cook everything until it is well combined.  Cook everything for about 5 more minutes.  Enjoy!

STEP BY STEP INSTRUCTIONS:

Gather all ingredients.
