Homemade Lemon Extract

Recipe Makes: 12 oz lemon extract

INGREDIENTS:

Peels from 3 lemons

12 oz vodka (I used 40% proof)

1 16oz mason jar

DIRECTIONS:

  1. Wash and sanitize bottles and lids. Wash with mild soap water, rinse, then carefully pour boiling water into the bottles and lids and let sit for 5 minutes. Carefully pour out the water and rinse with cold water until jar is cool.
  2. Wash and scrub the lemons very well (I washed mine with dish soap), to make sure there is nothing left on it.  Using a peeler, peel the lemons.  But be careful so you don’t get too much of the white peel.
  3. Add the lemon peels and vodka to a mason jar.  Close the lid tightly and shake for at least 20 seconds.  Come back every week to shake it for at least 20 seconds.  Let the lemon peels steep for 6 weeks.
  4. Once extract is finished steeping, remove the lemon peels, and use as needed.  Enjoy!
