Recipe Makes: about 20 fritters

INGREDIENTS:
2 medium zucchini
1 medium onion
1 small potato
½ cup cheese
1 tsp salt & pepper
2 eggs
¼ cup flour
Olive oil for frying
Greek Yogurt; for dipping
DIRECTIONS:
- Using the medium grater setting on your food processor, shred the zucchini. Then place the zucchini into a kitchen towel and squeeze out the any liquid that comes from the zucchini.
- Still using the food processor, shred the potato and onion. Combine the vegetables in a medium mixing bowl. Add in cheese, salt and pepper, eggs and flour. Mix everything until well combined.
- Heat up 2 tbsp of olive oil in a pan. Once warm, scoop the zucchini mixture using a ¼ cup. Pat it down and fry until golden. Then carefully use a spatula to flip. Fry both sides until golden brown.
- Place on a paper towel so the oil could get soaked up. Enjoy!
STEP BY STEP INSTRUCTIONS:

Gather all ingredients.
