Recipe Makes: 4 servings

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

INGREDIENTS:

2 cup spinach

1 cup orzo

½ tsp salt & pepper

1 ½ tbsp butter

2-3 garlic cloves

2 cups water

DIRECTIONS:

  1. In a deep sauce pan, melt the butter on medium/low heat.  Add in orzo and saute for about 5 minutes or until golden brown.  Stir occasionally so the orzo doesn’t burn.
  2. Add in water and place the lid onto the pan.  Let boil on medium/low heat for 10 minutes or until the water is gone and the pasta is Al Dente.
  3. While the orzo is cooking, finely dice the garlic, and roughly chop the spinach.  Set aside until ready to use.
  4. Once the water is gone, add in spinach, garlic, salt & pepper and cook for another 5 minutes.  Or until spinach is soft and garlic fragrant. Take off heat.  Enjoy!
