Blueberry Muffins (VIDEO)

Recipe Makes: 12 muffins

Prep Time: 15 minutes

Cook Time: 25-30 minutes

Total Time: 40-45 minutes

INGREDIENTS:

2 cups blueberries

2 cups flour, plus 1 tbsp for rolling blueberries

2 eggs

1 cup of honey

1 tsp vanilla extract

1 tsp vinegar

1 tsp baking soda

1 cup sour cream

Non-stick cooking spray

Cupcake liners

DIRECTIONS:

  1. Preheat oven to 350 F.  In the bowl of a stand mixer, combine 2 cups flour, eggs, honey, and vanilla extract.  Mix until everything is well combined. 
  2. In a small ramekin, combine baking soda and vinegar.  Once the mixture fizzes add it to the sour cream and mix.  Let sit for 5 minutes or until the sour cream starts to look fluffy.  While waiting for the sour cream mixture to activate, take your blueberries and add the remaining 1 tbsp of flour to them.  Mix well, so that all the blueberries are coated.  This helps them not sink to the bottom when baking.
  3. Gently fold the sour cream into the muffin batter.  Once well combined, incorporate the blueberries into the batter as well.
  4. Line a muffin tin with cupcake liners and spray them with cooking spray so they won’t stick to the liners.  Pour the batter until it is just shy of the top of the liners.  OPTIONAL: add a few more blueberries on top.
  5. Bake muffins at 350 F, for 25-30 minutes or until top is golden brown and tooth pick comes out clean.  Enjoy!
