Instant Pot Lime Chicken

Recipe Makes: 4-6 servings

Total Time: 35 minutes

INGREDIENTS:

2 chicken breast

2 tsp chili powder

1 ½ tsp salt

¼ tsp crushed chili peppers

1 tsp onion powder

1 tsp garlic powder

½ tsp pepper

½ tsp cumin powder

½ tsp paprika

2 tbsp lime juice

1 cup water

DIRECTIONS:

  1. In a small ramekin, combine the dry ingredients (chili powder, salt, crushed chili peppers, onion powder, garlic powder, pepper, cumin powder, paprika) and mix well until combined.
  2. Grab your Instant Pot, place the chicken breasts into the pot and sprinkle the dry rub onto both sides. Pour water into the pot and drizzle the lime juice onto the chicken.
  3. Turn the lid to sealing and turn the instant pot on to high pressure for 15 minutes with a natural release for 5. The pot takes about 10 minutes to build up pressure.
  4. Once you’ve released pressure, shred the chicken with a fork or shredder craws. Mix the chicken around in the juice to make sure all the spices are well combined. Keep in pot with lid sealed until ready to serve. Serve with flour tortillas, rice, guacamole, salsa, cheese, any toppings you could thinks of! Enjoy!
