Recipe Makes: 2 pastries

INGREDIENTS FOR DOUGH:
3 ½ cups flour
1 tbsp honey
1 tsp active dry yeast
1 tsp salt
1 ½ cups milk; warm
1 tbsp olive oil
1 egg; for egg wash OPTIONAL
INGREDIENTS FOR FILLING:
1 cups feta cheese
1 cup farmer cheese
1 cup mozzarella cheese
DIRECTIONS:
- In a large bowl, combine salt and flour (set aside for now). Heat up milk until it reaches 100-115 F, check with a thermometer. Once milk is in the desired temperature range add in honey and yeast. Mix until combined and let sit for 5-7 minutes.
- In a large mixing bowl, add flour and salt. Mix until combined. Add in milk, and knead until everything is well combined, mix in olive oil. Knead until dough ball forms.
- Cover with clear wrap and let rise for 1 hour in a warm area. While dough is rising, combine the three cheeses in a bowl and mix until well incorporated.
- Preheat oven to 400 F. Dump dough out on to a well-floured surface and cut in half. Roll dough out until it is 1/2 inch thick and in the shape of a rectangle. then make two lines of cheese on the edge. Use about 1/2 of a cup. Then fold the edge over the cheese and pinch shut. (look at the picture below)
- Then take the two ends and twist them together. (once again look at the picture below) Do the same for the end side.
- Line a baking sheet with parchment paper. And place the khachapuri on and sprinkle 1 cup of the cheese mix into the middle. Let sit for 20-30 minutes to rise. OPTIONAL: Crack the egg into a ramekin and brush the dough with the egg wash.
- Place into the preheated oven and bake for 15-20 minutes or until the cheese is melted and crust is golden brown. Enjoy!
