Recipe Makes: about 24 pancakes
Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes
INGREDIENTS:
2 cups flour
2 cups milk
2 eggs; whites and yolks separated
1 tbsp baking powder
1 1/2 tbsp white vinegar
1/2 stick of butter; melted
1 tsp vanilla extract
DIRECTIONS:
- In a large bowl, sift together flour and baking powder.
- In the bowl of a stand mixer, whisk egg whites until fluffy and peaks are firm (about 6-10 min).
- In a small bowl add milk and vinegar together. Set aside for 10 minutes.
- In a separate bowl mix butter, egg yolk, and milk mixture until combined. Combine wet ingredients with dry (everything except the egg whites).
- Gently fold in the egg whites, being careful not to deflate them.
- Heat up a large pan on medium heat and toss in some butter (enough to butter up the pan). Pour the batter using a ¼ measuring cup. Flip once golden brown. Remove from heat and eat with your favorite toppings. Enjoy!
